Blueberry Pie Baked Oats Recipe

Ingredients
- 1 cup frozen blueberries
- 2 tbsp white sugar
- 2 tsp lemon juice
- 1 tsp cornflour + 1 tsp cold water
- 1 small ripe banana, mashed
- 1 cup rolled oats
- 3 tbsp chopped pecans
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- Pinch of sea salt
- 3/4 cup Nature’s Charm Evaporated Coconut Milk
- 1/4 cup fresh blueberries + a handful to top
- Non-dairy vanilla yogurt
- Handful of fresh blueberries
- Almond butter, to drizzle
- 1-2 tbsp chopped pecans
Instructions
- Combine the blueberries, sugar, and lemon juice in a small saucepan and heat over medium. Mix together the cornflour and cold water separately and stir into the blueberries. Cook for about 5 minutes or until the berries have softened and the liquid starts to thicken up, then remove from the heat and set aside.
- Preheat the oven to 180C/160 C fan/350F/gas 4.
- In a bowl, stir together the mashed banana, oats, chopped pecans, maple syrup, vanilla, baking powder, salt, evaporated coconut milk, and fresh blueberries.
- Add half of the oat mixture to a small baking dish, then add the blueberry pie filling in an even layer and top with the rest of the oat mixture. Sprinkle the remaining handful of blueberries evenly on the top, pressing them into the oats.
- Bake for 30-35 minutes until the top is golden and the oats feel mostly firm to the touch. Remove from the oven and cool for 5 minutes before serving, then spoon into individual bowls and enjoy as is or with your choice of toppings- vanilla yogurt, fresh blueberries, a drizzle of almond butter, and more chopped pecans (hazelnuts, almonds, or walnuts also work well!)
