Rose Tteokbokki
Rose Tteokbokki Recipe
Ingredients
- 3 cloves garlic
- 30g vegan bacon (store bought or homemade)
- ½ onion
- 100ml shitake bouillon
- 100ml hot water + 2 dried shitake mushroom soaked for 1 hour
- 1 cup Nature’s Charm Evaporated Coconut Milk
- 1tbs gochujang
- 2tbs Korean chilli Gochugaru
- 10 broccoli florets
- 1 ½ cup tteokbokki
- 2 slice cashew cheese
- 2 stalks green onion
Instructions
- Place tteokbokki in a bowl and add hot water to soften.
- Place garlic, vegan bacon, onion and shitake bouillon in a hot pan, mix it a little.
- Add Nature’s Charm Evaporated Coconut Milk, gochujang, gochugari, broccoli florets, tteokbokki, stir everything together and cook for about 5-10 minutes when the tteokbokki has softened.
- Place 2 slices of vegan cheese on top.
- Cover with lid for the cheese to melt and serve immediately. Enjoy!
