Rose Tteokbokki Recipe

Ingredients

  • 3 cloves garlic
  • 30g vegan bacon (store bought or homemade)
  • ½ onion
  • 100ml shitake bouillon
  • 100ml hot water + 2 dried shitake mushroom soaked for 1 hour
  • 1 cup Nature’s Charm Evaporated Coconut Milk
  • 1tbs gochujang
  • 2tbs Korean chilli Gochugaru
  • 10 broccoli florets
  • 1 ½ cup tteokbokki
  • 2 slice cashew cheese
  • 2 stalks green onion

Instructions

  • Place tteokbokki in a bowl and add hot water to soften.
  • Place garlic, vegan bacon, onion and shitake bouillon in a hot pan, mix it a little.
  • Add Nature’s Charm Evaporated Coconut Milk, gochujang, gochugari, broccoli florets, tteokbokki, stir everything together and cook for about 5-10 minutes when the tteokbokki has softened.
  • Place 2 slices of vegan cheese on top.
  • Cover with lid for the cheese to melt and serve immediately. Enjoy!
