BBQ Jackfruit Nachos

BBQ Jackfruit Nachos Recipe

Ingredients

  • 1 tbsp veg oil
  • 1 medium red onion
  • 2 cloves garlic
  • 1 jalapeño pepper
  • 1 red bell pepper
  • 2 tins Nature’s Charm BBQ jackfruit
  • 3 tbsp BBQ sauce
  • You’ll also need 1 bag of tortilla chips
  • Toppings:
  • Pineapple chunks
  • Sliced jalapeño
  • Sliced spring onion
  • Fresh coriander
  • Lime
  • Vegan sour cream

Instructions

  • Peel and slice red onion
  • Peel and mince garlic cloves
  • Deseed and dice jalapeño (If you want it HOT, leave the seeds in!)
  • Deseed and slice red bell pepper.
  • In a non-stick pan or wok, heat oil on medium.
  • Add onion, garlic, and jalapeño, and sauté for 3-5 minutes until onions become translucent.
  • Add red pepper slices and cook for another few minutes until softened.
  • Open tins of Nature’s Charm BBQ jackfruit and transfer to the pan, breaking apart any large chunks.
  • Add BBQ sauce and stir all together to coat well in sauce.
  • Increase heat a little and cook until the sauce thickens and becomes sticky, taking care to stir frequently to keep it from sticking to the pan.
  • Remove BBQ jackfruit mixture from heat and spoon onto a serving dish or individual plates layered with tortilla chips.
  • Top with pineapple chunks, jalapeño slices (if you don’t like too much heat, leave these off), sliced spring onion, and chopped coriander.
  • Add a squeeze of fresh lime juice and a big dollop of vegan sour cream (or serve it in a bowl for dipping instead).
