BBQ Jackfruit Nachos
BBQ Jackfruit Nachos Recipe
Ingredients
- 1 tbsp veg oil
- 1 medium red onion
- 2 cloves garlic
- 1 jalapeño pepper
- 1 red bell pepper
- 2 tins Nature’s Charm BBQ jackfruit
- 3 tbsp BBQ sauce
- You’ll also need 1 bag of tortilla chips
- Toppings:
- Pineapple chunks
- Sliced jalapeño
- Sliced spring onion
- Fresh coriander
- Lime
- Vegan sour cream
Instructions
- Peel and slice red onion
- Peel and mince garlic cloves
- Deseed and dice jalapeño (If you want it HOT, leave the seeds in!)
- Deseed and slice red bell pepper.
- In a non-stick pan or wok, heat oil on medium.
- Add onion, garlic, and jalapeño, and sauté for 3-5 minutes until onions become translucent.
- Add red pepper slices and cook for another few minutes until softened.
- Open tins of Nature’s Charm BBQ jackfruit and transfer to the pan, breaking apart any large chunks.
- Add BBQ sauce and stir all together to coat well in sauce.
- Increase heat a little and cook until the sauce thickens and becomes sticky, taking care to stir frequently to keep it from sticking to the pan.
- Remove BBQ jackfruit mixture from heat and spoon onto a serving dish or individual plates layered with tortilla chips.
- Top with pineapple chunks, jalapeño slices (if you don’t like too much heat, leave these off), sliced spring onion, and chopped coriander.
- Add a squeeze of fresh lime juice and a big dollop of vegan sour cream (or serve it in a bowl for dipping instead).
