Filo Pie and Kumara Chips Recipe
Ingredients
- 1 large kumara
- Olive oil and cracked pepper
- 1 can Nature’s Charm Marinated Banana Blossom
- Marinade:
- 2 Tbsp coconut aminos
- 1 Tbsp apple cider vinegar
- 2 Tbsp vegan mayo
- Salt, Pepper, Lemon Juice (to taste)
- Vegan filo pastry:
- Vegan butter
- Vegan tartar sauce (mix of vegan mayonnaise, mustard, apple cider vinegar, diced pickles, lemon juice)
- Spring onions (garnish)
Instructions
- Preheat the oven to 200C fan.
- Chop the kumara into chip sized chunks.
- Drizzle with olive oil, cracked pepper, salt and leave to bake.
- Drain the Nature’s Charm marinated banana blossom and shred into small pieces.
- Mix in with the marinade and fold into triangle shaped filos.
- Brush with vegan butter and bake until golden.
- Serve with a generous amount of vegan tartar sauce and garnish with spring onions.
