Filo Pie and Kumara Chips Recipe

Ingredients

  • 1 large kumara
  • Olive oil and cracked pepper
  • 1 can Nature’s Charm Marinated Banana Blossom
  • Marinade:
  • 2 Tbsp coconut aminos
  • 1 Tbsp apple cider vinegar
  • 2 Tbsp vegan mayo
  • Salt, Pepper, Lemon Juice (to taste)
  • Vegan filo pastry:
  • Vegan butter
  • Vegan tartar sauce (mix of vegan mayonnaise, mustard, apple cider vinegar, diced pickles, lemon juice)
  • Spring onions (garnish)

Instructions

  • Preheat the oven to 200C fan.
  • Chop the kumara into chip sized chunks.
  • Drizzle with olive oil, cracked pepper, salt and leave to bake.
  • Drain the Nature’s Charm marinated banana blossom and shred into small pieces.
  • Mix in with the marinade and fold into triangle shaped filos.
  • Brush with vegan butter and bake until golden.
  • Serve with a generous amount of vegan tartar sauce and garnish with spring onions.
